Banana Bread browned butter, malt & toasted oat

BA's Best Banana Bread, re-balanced to set and bake through, then built out with browned butter, malted milk powder, toasted oat flour and mascarpone.

Prep ahead ~45 min

All three need cooling time. Run the butter on the stovetop while the oven does the oats and bananas.

Toasted oat flour 100 g → 80 g

Steel-cut oats on a sheet pan, 350 °F, 8–12 min, stir once, until fragrant and a shade darker. Cool completely before grinding, or they turn to paste. Grind 45–60 s, sift, re-grind the tailings.

Concentrated banana 5 bananas → 530 g

Heavily spotted to nearly black. Roast in the peel at 350 °F, 15–20 min, until black, glossy, split and slumped. Or microwave covered, 5–6 min — faster, flatter in flavor.

Drain either way. Cool 10 min, slit, strain. Reduce the liquid in a small skillet to about 4 Tbsp, 3–6 min — watch the end, it scorches fast. Stir back in, mash, cool, weigh.

Browned butter 200 g → ~167 g

Light-bottomed saucepan, medium, swirling, 6–9 min, until the solids go amber and it smells nutty. Pull at amber. Scrape into a bowl, fond included, unstrained. Cool to warm-room.

Method tap a step when done

  1. Oven to 325 °F, rack in the middle. Spray two 1.5 qt glass pans, line with parchment, overhang on the long sides. Nothing under the pans.
  2. Whisk the dry together, breaking up malt clumps.
  3. Whisk the brown sugar into the cooled browned butter, fond and all. Add the mascarpone, then the eggs one at a time, then vanilla.
  4. Whisk in the 530 g of banana.
  5. Add the dry all at once and fold by hand with a spatula, not the mixer, until a few streaks remain. Fold in add-ins; the last streaks go with them. Don't rest the batter.
  6. Divide by weight, 900 g per pan. Smooth the tops.
  7. Bake 75–85 min. Tent at minute 40. Swap and rotate the pans at the halfway mark, and read the side and bottom color through the glass.
  8. Pull at 205 °F in the center.
  9. Onto a dry towel or wood board. 10 min in the pan, lift out onto a rack, cool completely, 2 h minimum, before slicing.
Glass pansNever set a hot Pyrex pan on cold stone, a wet rack, or a damp trivet. It can shatter.

What was causing the dense, wet loaf
IssueOriginalWhy it hurts
Banana : flour340 : 188 gBanana is ~75% water — past what flour and egg can set. Unweighed bananas swing 250–450 g.
Baking soda1¼ tspRoughly triple a normal dose. Big rise, then collapse — the gummy band.
Sugar200 : 188 gHygroscopic. Holds water in the crumb and delays the set.
Pan fill~980 gOverfilled. Outside browns before the center reaches temp.
DonenessClean testerUnreliable in a batter this wet. Temperature is the honest gauge.
Cooling1 h in panTraps steam against the bottom and sides.
Mix orderFlour, then bananaAgitating after the flour develops gluten and deflates the batter.
Glass vs metal pans

A 1.5 qt glass pan holds what an 8½ × 4½ metal pan does — about 6 cups — so 900 g still lands a little under two-thirds full. What changes is the heat: glass passes radiant heat straight to the sides and bottom while insulating the center. Hence 325 °F, the longer window, the earlier tent, and out of the pan at 10 minutes. Glass also coasts several degrees past the pull temp.

In metal pans: 335 °F, 70–80 min, tent at 45, pull at 205–208 °F, cool 15 min in the pan.

Why each choice
  • Mascarpone vs sour cream. Mascarpone is about twice the fat, a third less water, and nearly neutral in pH. Richer and more tender, but it browns faster and loses the tang that balances the malt and dark brown sugar. With it: tent 5 min earlier, salt to a scant 1¾ tsp, and bring it to room temp.
  • Malted milk powder: plain only. Not Ovaltine, and not diastatic malt powder — an enzyme product for yeast bread that leaves the batter slack and gummy.
  • Cap oat flour at 20% of the flour. No gluten. What it gives is beta-glucan, which binds water — why the banana goes up to 265 g per loaf with oat flour in the mix.
  • Toast oats before grinding, never after. Oat flour scorches unevenly.
  • Browning butter anywhere: start about 20% heavier to replace the water you drive off.
  • Nine changes from the original. If a loaf comes out wrong, back out one variable at a time.
Plain version

Single loaf, no browned butter, malt or oat: 190 g AP flour, 170 g dark brown sugar, 85 g melted butter, 250 g banana, everything else as the single loaf.

Troubleshooting
  • Still wet in the center: banana to 480 g (double), pull at 208 °F.
  • Too dry or tight: back up to 560 g banana, nothing else.
  • Gritty crumb: the oat flour needed another grind and a finer sift.
  • Sunken middle: check the baking soda measurement.
  • Top too dark: tent at 35.
  • Sides or bottom too dark: the glass. 315 °F, add 5–10 min.
  • Butter tastes scorched: it went past amber. Pour it out the moment it's there.
  • Flat or oversweet: mascarpone with no tang. Full-fat sour cream next time, or more salt.
