Banana Bread bake log

What was actually made, versus what the card says. Companion to the banana bread recipe.

Bake 001 13 September 2026

Two loaves in 1.5 qt clear Pyrex, plain, no add-ins. Running it plain makes this a clean baseline — nothing for the malt, browned butter or banana to hide behind. Add chocolate or walnuts only after the plain version is dialed in.

Method deltas

  1. Bananas roasted in the peel at 350 °F rather than microwaved. Drained, liquid reduced, returned to the mash. Landed at 600 g rather than 530 g.
  2. Creamed, not whisked. Browned butter and sugar wouldn't come together as a paste, so the bowl went into the freezer ~5 minutes to re-solidify the fat, then into the stand mixer and whipped light. This converts the loaf from a melted-butter quick bread to a creamed cake method.
  3. Pans raised. Glass pans on a wire rack over a reflective sheet tray, cutting radiant heat to the bottoms.
  4. Bake targets: 85–95 min, tent at minute 35, pull at 205 °F.
  5. Cooling: out of the pans after ~10 min, parchment off, uncovered on a rack overnight.

Predictions made before the bake

#PredictionOutcome
1Lighter, more open, cakier crumb — from the creamingpending
2Higher rise, domed and cracked top — same causepending
3Moist, possibly slightly heavy center — from 600 g bananapending
4Longer bake — more batter, more banana, less bottom heat✓ 93 min, top of the 85–95 estimate
5Faster top browning — less acid for the sodapending
6Cleaner, less muddy flavor than all-dark-brownpending
7Risk: pale, under-set bottoms from the reflective traypending

Results

Confirmed: 93 minutes to 205 °F internal, at 325 °F, 935 g per pan, glass on a rack over a reflective tray. This is the calibration number for this configuration — drop the tray or go back to 530 g banana and it will come in meaningfully shorter.

Next-bake hypotheses

Leave blank until Bake 001 is judged. Change one thing at a time from here. Bake 001 is thirteen-odd deviations off the original, so however it turns out, it can't say which change earned the result. From Bake 002 on, one variable per bake.
